Something New for Breakfast

Guess which is which...
Bear here...Neighbors who have chickens and are willing to sell some eggs ROCK. When they give you a six pack of TURKEY eggs to try they REALLY ROCK.

Time to try something new for breakfast.

Three things about turkey eggs:
  1. The shell is a little thicker so it is a little more difficult to get the egg out without breaking the yolk. (50% right the first time, not bad.)
  2. The yolks are bigger and the egg takes up more space in the frying pan.
  3. In a word... Yum.
On the side... Simple Sunchoke Hash- Remember to get the hash close to done before starting the eggs.

The sunchokes, cleaned and ready to chop thin.

Melt some butter in a med-hot pan while chopping as much of the onion as you want. I used 1/2 of the onion.

Frying with the lid on speeds up the cooking. These took 15 min. (Remember to stir every 3 to 4 min. so you are browning not burning the sunchokes.)
As I am typing, this picture is making me hungry again. Just sayen. The turkey eggs tasted like our neighbor's chicken eggs, and were just as good. Type at ya later.
